Five Quick & Cool Summer Meals

When the dog days of summer hit, it’s only natural that you want to keep the oven off to keep the kitchen cooler. But sending out for fast food isn’t a cost-effective or healthy solution. Here are some alternatives for a satisfying dinner:

1. Fire up the grill.

You already grill out your meat, so why not throw your veggies and potatoes on the grill for easy, all-outdoor meal prep? Simply slice up peppers, mushrooms, summer squash, broccoli and more and toss them in an oil-and-vinegar-based Italian dressing. Let them marinate for a while or cook them immediately in an aluminum foil pouch or a special grill basket. You can do the same for potatoes, although it will take them a bit longer to cook.

2. Toss a pasta salad.

Boil your pasta in the late evening or early morning when the kitchen is at its coolest. Rinse it well with cold water and add raw veggies, cheese, sausage, olives and Italian dressing for a delicious, one-dish meal. If you prefer mayonnaise to dressing, toss in chicken, tuna or shrimp plus celery and your favorite veggies.

3. Haul out the slow cooker.

You can make a traditional pot roast or roast chicken without heating up the kitchen if you use a crock pot. Check out Campbell’s Kitchen for some easy recipes.

4. Build your own sub.

Whether you call it a hoagie, grinder or hero, you can make your own long sandwich at home that’s a lot healthier than those from a takeout restaurant. Start with a whole-wheat roll, add your favorite low-fat, low-sodium meats and cheeses and add a variety of crunchy veggies. Top it off with olive oil, Italian dressing or low-fat mayo.

5. Swirl a smoothie.

A smoothie made of fresh and frozen fruits, fruit juice and fat-free yogurt makes a nutritious, filling meal. Not only is it full of healthy protein, it can give you a day’s serving of vitamin and fiber packed fruits.
