Less Fat Meatloaf

Mix half turkey and half hamburger and boil in water for 15 minutes. Pour off the water, which also pours off most of the fat and does not affect the taste of the meatloaf. Add the usual ingredients and see for yourself. I learned this in a weight loss study by a medical center. Now I pre-boil hamburger before I make anything with it.

Substitute for Flavor & Nutrition

When a recipe requires coating with bread crumbs, try substituting a mixture of toasted wheat germ (found on the cereal shelves) and ground nuts. I grind them together. Depending on the item you're coating, you can add your favorite herbs (basil and marjoram for chicken) and perhaps some parmesan cheese. It adds flavor and nutrition without fat. If you are coating something that requires you to dip it in melted butter first, try a fat free oil-based dressing instead.
