Mix half turkey and half hamburger and boil in water for 15 minutes. Pour off the water, which also pours off most of the fat and does not affect the taste of the meatloaf. Add the usual ingredients and see for yourself. I learned this in a weight loss study by a medical center. Now I pre-boil hamburger before I make anything with it.
When a recipe requires coating with bread crumbs, try substituting a mixture of toasted wheat germ (found on the cereal shelves) and ground nuts. I grind them together. Depending on the item you're coating, you can add your favorite herbs (basil and marjoram for chicken) and perhaps some parmesan cheese. It adds flavor and nutrition without fat. If you are coating something that requires you to dip it in melted butter first, try a fat free oil-based dressing instead.
When making meatloaf, use ground turkey and ground lamb instead of beef and pork to eliminate grease. Season according to taste.
When storing herbs and leafy greens, first wrap them in a moistened SCOTT Towel and then put them in an open plastic bag before stashing in the refrigerator. They'll stay fresher, longer.
When grilling onions, stick two toothpick side by side into a whole onion and then cut in between the toothpicks to make ring slices. The toothpicks will hold the rings all together for easy grilling. Make sure to leave part of the toothpick sticking out as a handle to place onions on the grill.
Take a straw and insert it from the bottom of the strawberry and push it out through the top. The straw will pop out the green stem and will waste very little of your strawberry.
Rather than bugging the family to eat more fruit, I make smoothies out of frozen fruit. I bought a small, inexpensive smoothie maker and now keep a wire basket in my freezer with different frozen fruit: blackberries, strawberries, peaches, etc. I can customize the flavors to each person in the family, and add low-fat milk for a quick, fruity smoothie. Fruit yogurt can be added for additional health benefit too.
I found really cool Lunch Box Ice at Amazon.com. These ice packs come in fun colors and in different sizes. They're great for keeping lunches cool and fresh, and my kids love them.
